Hyderbadi dum biryani, a classic dish of the Mughal Nizams is an eye-catching aromatic rice loved by all. We all love biryani, but when it comes to preparing them most of us, step back because of the tedious process. But trust me, once you learn the right process, it is such an easy breezy way of making restaurant style chicken dum biryani. You will adore it.
Recipe of hyderabadi dum biryani
4]Corainder & Mint Leaves
6]Garam Masala Powder[Caraway seeds,cardamom,cinnamon,cloves], Bay leafs, Kasturi Mehthi,Salt,tumeric, redChilli,Black pepper,green Chilli-4
7]Ginger & Garlic paste.
9]Ghee- 2 tablespoon, Saffron
10] Cooking Oil- 250ml.
How To Make Special Hyderabadi dum biryani
1] Wash Rice 2-3 times & Soak for 30 minutes. Drain it to a Colander. Set this aside.
2]While the rice soaks. You can wash and cut Onions and leaves. They should sliced in a fine shape.
3] Heat a pan with oil around 250ml,Add Onion in the pan and fry untill it gets golden to light brown.
4] Wash Chicken and cut into pieces[keep medium pieces] And Add all spices[garam masala,salt-2tbsp,turmeric-1/4tbsp,red chilli-4tbsp, a pinch of black pepper,Kasturi mehthi-2tbsp smash it palm,and curd around 250ml,Coriander & mint Leaves, 4-5green chilli, Half of fried onion,Lemon-2 and Marinate this.
5] Take a big bowl and add water 2.5Litre of water ,Add bayleafs & Caraway seeds. Add 2-3tbsp of Salt ,heat the water untill it starts boiling.
6]Add soaked Rice in Boiling water and cook. after rice is half cooked,Drain the water and keep a side.[Remember rice should be half cooked as it is a dum process, remaining rice will be cooked later.]
7] After draining rice then keep some rice in the bowl and add marinated chicken and half cooked rice.
8] Add heated oil, ghee-2tbsp garnish it with coriander&mint leaves and fried onion,a pinch of saffron on it.
9]Now comes the dum process keep a thick roti pan on the stove and keep that big bowl on the pan.
10] heat 10-12mins. Now Dum Biryani is ready.
